V i t i c u l t u r e

We are proud to hold the High Environmental Value (HVE) Level 3 certification, a testament to our commitment to environmentally friendly practices. We grow our grapes organically whenever possible, relying on natural substances like copper and sulfur to maintain the health of our vines. However, we remain pragmatic and flexible, reserving the option to switch to sustainable farming methods if we face insurmountable challenges related to organic techniques. In addition, we prioritize mechanical weeding, avoiding the use of chemical herbicides to ensure a healthier soil ecosystem and a more sustainable approach to viticulture.

W i n e m a k i n g

We carry out a cold pre-fermentation maceration lasting 8 to 10 days depending on the vintage to promote the extraction of aromas and flavors. This is followed by a gradual fermentation process carried out at carefully controlled temperatures. Throughout fermentation, we use traditional methods of pumping over and manual punching down to ensure optimal extraction and finesse of the wine.

B r e e d i n g

Our maturation takes place in oak barrels, 30 to 40% of which are new each year, allowing for a delicate integration of wood and wine. We carefully monitor the barrels, topping them up weekly to maintain the integrity and freshness of the wine. The maturation period varies between 12 and 18 months, tailored to specific appellations and vintages, ensuring that each wine develops its unique character and complexity while embracing the nuances of its terroir.
