Winemaking

Harvested by hand, the grapes are entirely destemmed, then vinified in vats with indigenous yeasts. A cold pre-fermentation maceration precedes a gentle fermentation with light punching down. The wine is aged in oak barrels (20% new) for 16 months, without racking, to preserve the finesse and structure of the Pinot Noir.
